The steels used by Jean Dubost mainly come from the leading French and European steelworks.The main characteristics sought after in cutlery are:

  • hardness: (measured between 52/56 HRC: ROCKWELL hardness) essential for the quality of the cutting edge, it will be optimized by the carbon proportion making up the alloy

  • resilience: this is the knife’s capacity to warp before breaking.

  • resistance to rust: this is the capacity of the steel not to rust, it will be optimized by the quantities rate of chromium and nickel composing the alloy.

 

Steels used by Jean Dubost are all normalized, and answer the standards ASI420, ASI430 and ASI304.
